Kristen Suzanne’s Harvest Soup

I just created a most delicious soup! I named it Kristen Suzanne’s Harvest Soup because the colors and flavors subtly remind me of a fall harvest. It’s an easy and delicious Raw food recipe (just like all the recipes in my Raw food recipe ebooks). With Raw being this easy and delicious, who needs cooked food?

Those are two glass-mason jars full of the soup, in the background of the picture. Having plenty of Raw food on hand is one of the keys to success with living the Raw food lifestyle; so, I always make plenty extra when I prepare Raw recipes. This way I always have something “ready to eat” for the next couple of days. I can it drink straight out of the jar, easily take it with me when I’m running errands, or snack on it late at night when I’m watching a movie.

Kristen Suzanne’s Harvest Soup
Yield 6 cups

1 cup water
1 large zucchini, chopped
2 medium tomatoes, quartered
3 stalks celery, chopped
2 cups carrot, chopped
2 dates, pitted
1 clove garlic
2 tsp Himalayan crystal salt
1 tablespoon onion powder
1/2 teaspoon black pepper
1/2 cup flax oil
Blend all of the ingredients, except for the flax oil, on high speed in your blender until really creamy (approximately one minute – I prefer this soup a tad warm and very creamy). Then, while the blender is running on low speed, add the flax oil. Continue blending, at a higher speed, for another minute or less. This will make it slightly warm. Enjoy!

Variations:
~Substitute olive oil for the flax oil
~Add 1/2 teaspoon coriander
~Add 1/2 teaspoon pumpkin pie spice

    The difference in the size of veggies used is probably the reason, like the zucchini, celery stalks tomatoes, and even the “size of the chopped” carrots can make a difference. The smaller the size chopped, you could fit more into the cup, for example.

    Wow, this was really enjoyable. I made some in the morning and took it to work – which meant I ate it cold. The spices give it a nice warm feeling though (I used the coriander).     Yes! Start with 1/2 an avocado and see. Add it last after all of the other ingredients are blended smoothly. Then, decide if you'd like to add more. It'll be delicious!!!!! A different color, a bit on the browner side, but still yummy I'm sure. :)

    I just made this for lunch, and it's DELICIOUS! I only have cherry tomatoes on hand & am running low on carrots, so I had to improvise a little. I added spinach, reduced the salt to 1 tsp. & added only about 1-2 Tbsp. flax oil. YUM! Thanks, Kristen!

    Just made it. I didn't have zuichinni, so I used some sort of pumpkin squash I had and I added ginger (wouldn't recommend that – it took over the whole soup). Other than it is sure tasty and the fact that it is raw makes it even better!

    Hey Kristen,

    Just wanted to let you know I finally got around to making this awesome soup! I did make a couple changes, such as steaming the carrots (my blender is far from powerful) and replacing the oil with a big, ripe avocado. And the soup still had a warm orange tone after the addition of the avocado, which was definitely a pleasant surprise! :)
