Kiwi Black Bean Guacamole

Here’s a great recipe that is perfect for your next lunch. I love the way the kiwi gives it a lightness to offset the black beans and rich avocado. It will keep you filled with fiber, healthy fats, vitamin C, iron, and tons of antioxidants to help you live a long and healthy life!

Kiwi Black Bean Guacamole

Yield 1 serving

  • 1/2 cup cooked black beans* (rinsed well, if from a can)
  • 1 avocado, pitted, peeled and diced
  • 1/2 cucumber, diced
  • 2 kiwi fruits, peeled and diced
  • 1 to 2 pinches of Himalayan crystal salt
  • pinch black pepper

Toss (and slightly mash) the ingredients together and enjoy!

*I either make mine in a pressure cooker (here’s the one I have after lots of research), or when I’m short on time, I open a can of Eden Organic Black Beans – no salt added and the cans are BPA-free. I buy them by the case on Amazon because it’s much cheaper than buying them from Whole Foods. I also like their chickpeas.

Of course, you can get a little fancier and add some diced shallot (or purple onion) and a little fresh basil for flair. ;)

    Sounds delicious! I love certain fruits in guacamole (mango, pineapple) and I bet kiwi would be wonderful too. Love the idea of black beans in there as well.

    Mum gave me her pressure cooker when she came to visit and I love how quickly it prepares beans. Do you have an extra large pantry for all your bulk non perishables?

    I put beans n all that in there. Pantry has snacks, canned beans, and things like that. I don’t have extra pantry but I have a couple of big kitchen racks.

    I usually soak my beans for more than 12 hours change water after 6 hours. Next day I cook them only 10 minutes and switch off the heat and let them in almost boiled cooker for 20-30 minutes and they are done. If I do not soak them it takes hours to cook them. But soaking is mainly for better digestion. I making it for my 2 years old daughter too, so always soak all beans grains even rice.  Thanks a lot for recipe

    Hi Kristen,

    This is a unique version of guacamole. 

    I’d love to try this recipe if I could master properly ripening avocados and kiwis.  Like you, I live in a hot climate (South FL since January).  I buy the Haas avocados green so I can watch them ripening.  Still, I lose more to rot or else I’ll feel they are ripe but the flesh will be almost crunchy.  I rarely had this issue when I lived in NYC. 

    My last attempts at getting kiwis weren’t successful.  I rarely found them ripe in the store, and it would take weeks for them to soften.

    If you haven’t already, could you do some posts on how to ripen both?  Also, it’s been years since I’ve used a pressure cooker for beans.  How to use one could also be a helpful post.

    Are you still loving your Cuisinart food processor?  Have you had any cleaning issues with food bits getting under the non-removable rubber gasket?  I returned mine for that reason.  The latest model of 12-c KitchenAid that I got makes a mess when processing flours or powders.  I’ve researched and read every review on all models available by all companies…

    I soak even when I use my pressure cooker and then they cook in minutes.

    I haven’t had issues of cleaning it, I use a brush. I’m not sure about ripening in humid weather… Try ripening in fridge? Takes longer but might help. I’m new to using a pressure cooker but found a good book to help. Can’t recall the title but will find it and let you know.

    This sounds fantastic, Kristen! I think I’d have to sub out the kiwi, because I’m not a fan, but I’m guessing mango (or even tomato) would be great too.

    Interesting! I never would have thought of doing black beans with kiwi… those are two of my kids’ favorite foods. Hmmm… will have to try this!

    Blended with black beans? Lol. Not sure. Overall though, the recipe is mild in flavor with nice cooling texture. :)

    I thought that mixing fruit, which digests in approx 20 minutes, with any other food type which takes long to digest causes gas.

    Just tried this for a play date I had with a fellow vegan mom. We both loved the flavors! I liked how easy it was to make. Found it at the last minute AND had all the ingredients…never happens :) And it fits the bill of me not ever knowing what to do with cucumbers (I am a member of an organic food club and get a weekly varied basket of produce)…speaking of which, I will definitely be trying the cucumber boats, seeing how I love avocados.
