Over the years I’ve become friends with various women around the world via the internet. It’s a great way to find like-minded people when you struggle with finding them in your local community. Enter: The Nourished Village.

The Nourished Village was created by my sweet friend, Joanna, to bring (and support) like-minded moms together in a virtual community. It’s just lovely. It’s filled with friendly people, recipes, empowering ideas, and caring support as we mamas navigate parenthood (asking questions in the Facebook Group like… Are you getting dental X-rays on your little one? Well, I decided to make another batch with a bit of a twist.

I’m not going to bore you with anything else… here’s the recipe.

Wait, you know what? I will mention one thing. This stuff makes a great gift. Make a batch and divide it into pint-sized glass mason jars. Maybe put a cute label on it or a ribbon if you’re that kind of person. Give these away to family, friends, teachers, etc. It’s so good – you really should share it.

We are a family who loves to travel, and our most recent epic road trip took us to Michigan. But, travel can wreak havoc on anyone’s best attempts to eat healthy. Not always. Check out my post below where I show how we traveled across the country while (almost exclusively) staying on our Real Food Foodie Lifestyle (i.e., we ate really healthy in spite of being on the road). It meant extra work, which isn’t always the thing you want to do after a day of being in the car, but I’m simply not willing to eat crap food which is most often what’s served in restaurants.

Wow. I’m truly in heaven. My Chocolate Chip Cookie Pie (gluten free) recipe is, officially, my favorite gluten free homemade dessert recipe. My second would be my Pumpkin Pie, but that’s a recipe I’ll share later. I can’t take all the credit for coming up with this masterpiece though. I was inspired by two things.

  1. Over a decade ago I ate a dessert at a local Italian restaurant where they had a “Pizzookie” which was a giant chocolate chip cookie served in a small cast iron pan with ice cream on top. I have longed for that for years, but I wouldn’t get it because it’s so unhealthy, obviously. Instead, I dreamt about it. For over a decade.
  2. Then, a few months ago, I was reading a fun blog, Cave Girl Eats. I saw that she made a giant paleo chocolate chip cookie in a pie dish. I thought to myself… THAT’S IT! I can recreate the Pizzookie! Now, mine isn’t strictly paleo like hers because grass fed butter belongs in this bad boy. Be sure to check out Cave Girl Eats’ blog. I call her “funny girl” because I’m frequently giggling when I read her work.

I get asked a lot about the things my family eats. Here’s the breakfast Greg usually has. Lucky for me, he’s happy to have the same thing day in and day out. On occasion, I rotate other things into his breakfast options, but I’d say the one he gets most often is his Coffee Shake, and he LOOOOOVES it. I love it because (it’s easy and) I can make this hours before he wakes up and it’s sitting in the refrigerator for him.

I’m fond of chocolate, and I’m sure my long time readers know that. It’s not often that a day goes by where I don’t have some rich, super dark, organic (and fair trade, of course) chocolate. My chocolate-loving sista, Lauren, is my kindred spirit in all things chocolate.

I’ve made a number of raw vegan chocolate recipes in the past, but it was time to change it. Nowadays, I find myself looking for ways to get pastured organic eggs in my diet as well as grass fed butter (I’ve come a long way). I figured chocolate pudding would be the ideal way to add them.

Time for a gluten free recipe that is easy to make, tastes delicious, and is dessert. How can it not be delicious though? It has CHOCOLATE! And, adding high quality vanilla makes for a match made in heaven. In fact, my family has been known to eat these as part of our breakfast.

Kamea, Greg, and my mom give these a thumbs up. Pair one with a cup of organic coffee or tea, and you’re set.

Recipe Gluten Free Paleo: Sticky Chocolate Coconut Squares

We plan on homeschooling Kamea so we’re starting to get involved with local homeschooling groups. Greg went to our first meeting recently, and I sent these Sticky Chocolate Coconut Squares with him to share with the group. I don’t normally use as much sweetener as I used in these, when I make desserts like this for home, but since I didn’t know the group, I thought I’d bump up the sweetness a bit. ;)
