Indian Mango Soup (Raw Vegan Recipe)

This soup is divine! We love it so much that I’m making a second batch to have with our dinner tonight. It’s super creamy, lightly sweet, and packed full of nutrition (tons –> vitamin C, iron, fiber, folate, vitamin B6, copper, vitamin K, potassium, and much more). It’s a definite keeper! You gotta make this one. And… don’t you just love recipes that only take you a few minutes to make?

Indian Mango Soup

Yield 3 1/2 cups

1 1/4 cups filtered water
2 cups fresh mango, chopped
2 cups spinach, gently packed
1/2 avocado (pitted, peeled)
1 teaspoon fresh lemon juice
3/4 teaspoon cardamom
1/2 teaspoon powdered ginger
pinch Himalayan crystal salt

Blend everything until divinely creamy. Enjoy!!!

Purple Smoothie (Raw Vegan Recipe)

Purple Smoothie

Yield 3 cups

1 cup blueberries
1 cup blackberries
1 mango, peeled and pitted
2 large handfuls spinach
2 tablespoons hemp seeds
1 teaspoon raw sunflower lecithin
1 teaspoon raw agave nectar
1/2 teaspoon cardamom
1 serving probiotic powder

Blend these nutritious ingredients up and enjoy! *Update: It was brought to my attention that I didn’t list water as an ingredient. Oops. My bad. I don’t remember now, but I suspect I had a cup of water in there.

Yield 1 quart

1 1/2 cups filtered water
1-2 handfuls ice
2 cups mango, peeled and pitted
2 tablespoons hemp seeds
1 large handful spinach
1 scoop SunWarrior rice protein powder
1 spoonful Sunflower Lecithin
1 serving probiotic powder

Blend it up!

Cosmic Carrots with Deviled Mango Dressing

This salad is gorgeous, vibrant and absolutely delicious. Click on the picture to enlarge it and you’ll see what I mean!

Dressing Yield 1 1/2 cups
1/4 cup water
2 tablespoons olive oil
2 tablespoons coconut oil
1 tablespoon fresh lemon juice
1 tablespoon vegan, organic white wine
1 mango, peeled, pitted, and chopped
2 dates, pitted
1 teaspoon garlic powder
1/4 teaspoon Himalayan crystal salt
1/8 teaspoon red Limo pepper*
2 carrots, sliced into thin rounds, using a mandoline or v-slicer

Garnish: 2-4 leaves fresh basil, chopped

Blend all of the ingredients together (except the carrots and basil) until creamy. Drizzle a few tablespoons of the dressing over the sliced carrots. Garnish with a few leaves of fresh basil, chopped.

*Red Limo pepper is available online at NaturalZing or substitute with cayenne pepper, of which you might want to add a little more.
