If you didn’t know, Oprah committed to going VEGAN for 21-days. I’m stoked! I’m elated! I’m so happy for her and the animals that have been saved as a result. Follow her blog for more details. She reported being very satisfied with the food so far. This could be huge y’all with Oprah supporting a Vegan diet…I’ve been waiting for this day to come and it’s finally here.

Ginger Spiced Wheatgrass – YOWZA!
I miss my former espresso days using my cute demitasse cups, so I’m giving them new life by drinking my wheatgrass from them. Isn’t it adorable? Only, I wanted to create a fun alternative to plain wheatgrass, because this never was my favorite beverage (I usually make faces while swallowing it). The verdict? This recipe is fantastically fun! And, it’s potent – Yowza! This little concoction will definitely put some “hip in your hop!”

One of my biggest passions (if not the biggest) is animals, so I’m always stoked when I see an article like this: Smartest Animals. I hope you enjoy this quick article as much as I did. Personally, I’m in awe of animals and filled with so much respect for them. How could you not be? They’re just so damn cool!
I’d love to have a pig as a pet, too…but all in due time. I envision myself someday living in a home with plenty of land, where I can grow some of my own food, and have all kinds of animals running around (horses, pigs, bunnies, dogs, etc).

Fat Free Strawberry Ginger Dressing – Lovely and Fresh!
Yesterday’s class was a major success and so much fun. I’ve already received multiple emails from students telling how much they loved it, and how eager they are for July’s class (check out the goods here…it’s going to be amazing – one of my best ever!).
Here is a deliciously fresh dressing to make as a staple in your household this summer. It’s light, fat-free (yay, put extra on!), and is going to add a little pep in your step with the sassy ginger kick in it. It pairs wonderfully with a spinach-based salad (spring mix greens are a touch too bitter and romaine lettuce is a little too heavy, which detracts from the lovely lightness of it).
Fat Free Strawberry Ginger Dressing
Yield 1 cup
1 1/2 cups fresh strawberries, destemmed and diced
Juice from 1 orange
1 tablespoon fresh ginger, peeled and grated
2 teaspoons raw agave nectar
1 teaspoon apple cider vinegar
1/4 teaspoon Himalayan crystal salt
Blend all of the ingredients together until smooth. Enjoy!

Juicing Sprouts Gives Me Extra Energy
Today’s juice is definitely kick-ass as far as nutrients go because I filled it with home-grown fresh sprouts. I’m feeling extra energized and strong after drinking just 1/2 a glass, and looking forward to going to the gym later this afternoon to work off some of this energy…and, speaking of working out, I received a great question on my blog yesterday about my feelings toward muscle /physical fitness in comparing my pre-raw-vegan days to now (Extra-High-Raw, All-Vegan). I plan on addressing this in a post in the next few days, because I do have some thoughts to share.
Sproutin’ Kick Ass Green Juice
Yield 2 quarts
2 cups water
4 cups sprouts
juice of 2 lemons
juice of 2 oranges
5 big radishes
2 golden delicious apples
1 bunch parsley
1 bunch celery
1 cucumber
Blend all of the ingredients (might take two batches in the blender to get it all done) and strain into a large bowl using a nutmilk bag.
Today’s workout
Legs (3 straight sets, 15 reps)
Walking lunges with dumbbells
Single leg squat with dumbbells
Wall sit (60 seconds in length, 3X, with 60 second rest between sets)
Cardio
Nice long walk to stretch my leg muscles
