
I’m fond of chocolate, and I’m sure my long time readers know that. It’s not often that a day goes by where I don’t have some rich, super dark, organic (and fair trade, of course) chocolate. My chocolate-loving sista, Lauren, is my kindred spirit in all things chocolate.
I’ve made a number of raw vegan chocolate recipes in the past, but it was time to change it. Nowadays, I find myself looking for ways to get pastured organic eggs in my diet as well as grass fed butter (I’ve come a long way). I figured chocolate pudding would be the ideal way to add them.
I was tempted to call this Fertility Chocolate Pudding because in some circles, raw pastured eggs and grass fed butter are fertility enhancing foods. But, somehow, Fertility Chocolate Pudding didn’t sound as good. Though, maybe I’m wrong.
Nourishing Chocolate Pudding (Gluten Free Recipe)
Yield 2 servings
- 1 medium to large avocado, pitted and peeled (my favorite avocado scooper in action here)
- 1/4 cup filtered water
- 1/4 cup raw honey or maple syrup
- 1/3 cup raw organic chocolate powder
- 2 raw pasture-raised egg yolks
- 3 tablespoons unsalted grass fed butter, softened
- 1 tablespoon organic coconut oil
- pinch sea salt
Blend everything until smooth (high powered blenders are the best way to do that…. seriously worth the money and will last). Enjoy Nourished Chocolate Pudding right away, or chill in the refrigerator for a couple of hours before serving.
