
Quick delicious lunches are my kind of thing when my schedule is full or I’m just too tired to be extravagant.
Here’s a lunch I tossed together for Kamea (my 3-year old) that definitely pleased her taste buds. This made two servings, which I had planned on giving Kamea the second serving for her lunch the following day. However, I woke up and found that Greg had eaten it in the middle of the night. He said it was awesome, so all is forgiven. ;)
Quickie Crab Salad
Yield 2 servings
- 1 can wild Dungeness crab from Vital Choice
- Squeeze of fresh lemon
- Couple dollops organic honey mustard
- 1 red bell pepper, seeded and diced
- Hefty drizzle of organic macadamia nut oil
Simply combine everything in a bowl and serve. She enjoyed this alongside some organic blueberries.
Bonus: Quickie Soup Idea
What did I have for lunch? Again, I was in a quickie mood, but I didn’t feel like crab salad. I had leftover smashed butternut squash in the refrigerator so I put that in a small soup pan, added a cup of homemade pastured chicken stock, and a couple of pats of organic grassfed butter. It was actually astonishingly good. So good that I plan on making bigger batches of smashed squash recipes in the future so that I can leftovers to make quickie soups.
