This dressing, Sweet Capri Dressing, is one of my favorites. It’s my most requested dressing from family and friends.
I made it this week, enjoyed it on a few different salads, and decided I should share! I promise that you will want to eat salads practically every day when you dress them with this delectableness.

Try it… you’ll see. It’s addicting. Salad dressing addicting? I’m not sure that’s ever been a thing – but I’m feeling it with this dressing.
Note: in my old version I used agave nectar, but that’s not something I buy anymore because it’s suspect… especially when there is delicious and nutritious raw honey available. Therefore, I changed the recipe to use raw honey here on my blog. However, if you’re vegan then you could use grade B maple syrup.
Sweet Capri Dressing
This dressing celebrates the Isle of Capri where they grow tons of lemons. It’s dynamite when served over a grapefruit and avocado salad or over a giant bowl of plain romaine lettuce.
And… did ya know? Lemons are very good for you (sure glad my mom practically has her own orchard). They’re an excellent source of vitamin C. But, that’s not all. These yellow darlings also have some folate, calcium, potassium, and flavonoids (known for fighting cancer and heart disease).
- 1/2 cup raw olive oil
- 3 tablespoons raw honey
- 2 tablespoons apple cider vinegar
- 1/4 cup + 2 tablespoons fresh organic lemon juice
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
Blend all of the ingredients together. Serve on your next salad. I especially love this on a salad with diced avocado. Yummmmmmmy.
Sometimes I use my Nutribullet to make this, too.
And… sometimes I add a bunch of fresh herbs to amp up the nutrition. Herbs are powerful health boosters. In this version I added basil and mint.
